This pasta is a cheap and easy meal to conjure up when you’re bogged down with the stress of exams. Do not worry about sticking too closely to the recipe – in fact it is a great way to use up any old, sad vegetables in the fridge. You could even throw some fresh herbs or a tablespoon of pesto into the sauce if you have any lying around. Be creative!
250g pasta of your choice
1 red onion, chopped
1 clove of garlic, minced
½ cup chopped mushrooms
¼ cup sundried tomatoes
2 zucchinis, diced
¼ cup of chopped black olives
Tin of chopped tomatoes
150 g sour cream
A large handful of baby spinach
Feta cheese, to serve
Bring a pot of water to the boil and add the pasta. Cook according to directions on the packet.
Meanwhile, add onion and garlic to a frying pan and cook until softened. Then add mushrooms, sundried tomatoes, zucchini and olives. Once everything is cooked add your tin of tomatoes and sour cream and stir until combined. Then add baby spinach.
Once pasta is cooked, drain and add to sauce mixture. Spoon into bowls and sprinkle with feta cheese to serve.
